Zucchini Fritters

These are a fan favourite in my house! They make for a nutritious snack or as a breakfast staple. I used zucchini grown in my garden. You can freeze shredded zucchini for a later use – like in fritters!

Ingredients

2 cups shredded zucchini
1/3 cup whole wheat flour
1 egg
1/4 cup shredded mozzarella cheese
1 tbsp ground flax (I use CanMar Grain)
1/2 tsp nutritional yeast

Instructions

1. Combine flour, flax, nutritional yeast and egg in a medium mixing bowl. Stir in shredded zucchini and mozzarella.

2. Drizzle canola oil in a large pan and heat over medium-low heat. Using a 1/4 cup, scoop out batter and pour on to pan one at a time. Your batter will be a little thicker than pancake batter due to the shredded ingredients. Try to even out the shredded zucchini in the fritters as you pour into pan. Once you have the pan full, cover and cook for 3-5 minutes and flip them. Continue until you have finished the batter.
