DIY Shake’N’Bake Drumsticks

With the cold weather here (and snow here in Saskatchewan!), we BBQ a lot less now. Drumsticks are still great to have oven baked. I’ve been adding more flax to my diet and I thought this was the perfect way to get my daily dose!

Ingredients

12-15 chicken drumsticks
1 1/2 cups seasoned breadcrumbs
1/2 cup ground roasted flax (I use Saskatchewan-based CanMar Foods that you can get at Costco or Amazon)
1 tbsp or less garlic powder
2 tsp onion powder
1/2 tsp salt
1 tbsp smoked paprika
1 tsp dried oregano (I use a heaping teaspoon)
3/4 tsp freshly ground black pepper
1/4 tsp cayenne powder

Instructions

1. Preheat the oven to 400 degrees. Combine breadcrumbs, flax and spices in a large Ziplock bag and shake to fully mix everything together.

2. Drop a few drumsticks in at a time and shake until coated. Transfer to a baking sheet that has a small wire rack inside so that the drumsticks don’t stick to the pan and every side of the drumsticks crisps up in the oven. Repeat process until all drumsticks are coated and spread out on the baking sheet. Sprinkle some of the remaining breadcrumb mixture overtop of the drumsticks.

3. Bake drumsticks for ~25 minutes, or until they reach an internal temperature of 165 degrees. Pair with your favourite salad or side dish.
