Saskatoon Berry Muffins

One of my favourite mid-summer activities is Saskatoon berry picking. My freezer is full of them! What better way to enjoy them than in muffins. Local Saskatoons, eggs, applesauce and flour are the staples of this recipe.

Ingredients

3 cups whole wheat flour
1 1/2 cups sugar (or less)
4 tsp baking powder
1 cup unsweetened applesauce
2 eggs
1 tbsp vanilla extract
2-3 cups Saskatoon berries (fresh or frozen)
Optional: 1/2 cup yogurt chips or semi-sweet chocolate chips

Instructions

1. Preheat oven to 400 degrees. Line and lightly spray 12 muffin cups.

2. Combine all dry ingredients and whisk together in a large bowl.

3. Combine all wet ingredients in a medium bowl and pour into dry mixture.

4. Gently fold in Saskatoon berries (and yogurt chips if adding them to this recipes) so that you don’t break the berries. These muffins are much better with whole berries, even if they were frozen.

5. Fill muffin cups 2/3 – 3/4 full and bake for 20 minutes. Cool for 15 minutes then move to a cooling rack to fully cool.
