Banana Bread

Do you have a lot of frozen bananas to use up but want a recipe with few ingredients? Look no further! This is my heartier take on the classic. I buy the snack-pack size applesauces so that it doesn’t go bad before I use up an entire jar.

Ingredients

5-6 ripe bananas (thawed)
1/2 cup unsweetened applesauce
2/3 or 3/4 cup sugar
1 egg, beaten
1 heaping (overflowing) teaspoon vanilla extract
1 tsp baking soda
1 1/2 cups whole wheat flour
Pinch of salt
Optional: 1/2 semi-sweet chocolate chips (Jayson always wants chocolate chips!)

Instructions:

1. Preheat oven to 350 degrees.

2. In a large bowl beat applesauce into bananas. Add sugar, egg and vanilla. Sprinkle in baking soda and salt and mix. Add flour and mix.

3. Spray a 4×8 loaf pan with cooking spray and pour in banana mixture. Bake for one hour. Cool on rack for about 15 minutes and gently take loaf out of pan to finish cooling before putting in an airtight container or baggie. Use oven mitts to do so to make sure you don’t burn yourself as the pan will still be hot.
