This is everyone’s favourite! I don’t really have a recipe as I go my taste, but this is a close resemblance to my popular bruschetta dish. This is great on pretzel crisps, toasted baguette or anything else you prefer!
Ingredients
6 Roma tomatoes (buy them from the grocery store or pick them from your garden a few days before you plan to chop them up so they are ripe and flavourful)
1 medium red onion
1/4 cup fresh basil (or more!)
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup balsamic vinegar
1/4 cup canola oil (I prefer to use the basil and onion camelina oil from Three Farmers for an extra rich flavour)
Instructions
1. Using a serrated knife, very finely chop the tomatoes but be gentle so you don’t bruise or crush the tomatoes too much. Add to a medium-large bowl. Finely chop the red onion and add to the bowl. Slice the basil in thin slices and add to the bowl.
2. In a small mixing bowl, combine the oil and vinegar. Season the tomato mixture with salt and pepper, then mix in the vinegar mixture until evenly coated.
3. Serve immediately or refrigerate overnight or for a few hours to “marinate” the tomatoes for more flavour. Serve with your choice of dipping (I prefer pretzel crisps).
