Vanilla Cupcakes

A quick and yummy recipe for any occasion! I use unsweetened applesauce in almost all of my baking to make it a healthy alternative to using a lot of butter or fats and add Canadian milk and eggs for moist cupcakes even after sitting for a few days.

Ingredients

4 eggs
1/2 cup granulated sugar
2/3 cup milk
2 tsp (or more) vanilla extract
3/4 cup unsweetened applesauce
2 cups flour (whole wheat or all-purpose, or 50/50 of each), sifted
Pinch salt
1 tsp baking powder

Instructions

1. Preheat oven to 350 degrees. In a large bowl, combine eggs and sugar and beat until fluffy. Add in the milk, vanilla and applesauce and beat until just combined.

2. In a medium bowl, whisk together flour, salt and baking powder.

3. Slowly add the flour mixture into the egg mixture.

4. Pour mixture evenly into 24 (2 of the 12-muffin pans) muffin tins lined with liners and lightly sprayed with cooking spray.

5. Bake the cupcakes for 20 minutes, or until golden brown and a toothpick comes out clean. Let cool completely then decorate with your favourite icing. I haven’t perfected an icing recipe yet so I prefer to buy the whipped icing from the grocery store and pipe it on using an icing piper tool.
