My French toast recipe is probably what got me into cooking. I absolutely love breakfast and what’s better than a recipe full of Canadian ingredients – Canadian-made bread, eggs, milk, strawberries and maple syrup!
Ingredients
3 Canadian-raised eggs
splash of Canadian dairy milk
1 tsp vanilla extract
Ground cinnamon, to taste
6 slices bread
2 bananas
1 cup (or more) frozen Canadian-grown strawberries
Instructions
1. Heat a large pan over low-medium heat. Add strawberries to a small pan, cover and cook over medium-high heat. Alternatively, you can thaw the strawberries in the microwave.
2. In an oval/ rectangular container, combine eggs, milk, vanilla and a sprinkle of cinnamon. When you add the cinnamon, make sure that you lightly sprinkle the cinnamon so that it doesn’t clump together. Using a small whisk or a fork, beat the mixture until combined.


3. Dip bread in the egg mixture, flip and dip the other side. Let the excess drain off the bread so you can transfer it to the pan without making a mess. Repeat for three other pieces of bread and sprinkle the uncooked tops with extra cinnamon. Cook for a couple of minutes on each side, until golden brown.


4. While the bread is cooking, peel and slice the banana. Place about a teaspoon of icing sugar in a handheld strainer.
5. Once the bread is finished cooking, transfer to a large plate. Repeat process with remaining bread and pour the remaining egg mixture (it won’t be much left) on top of the three pieces of bread.
6. Sift icing sugar on top of the French toast, then top with a bit of Canadian maple syrup, strawberries and their juices and banana.
