Sweet potatoes are one of my favourite foods! I love mixing sweet, savoury and spicy so I was a little inspired by it for this dish. Using Canadian ground beef adds an extra savoury flavour to the mix (and more nutrients too!). Feel free to add more of the spices to really make it your own.
Ingredients
1lb extra lean ground beef
3-5 carrots, peeled and diced (depending on your preferred amount of vegetables)
1 large sweet potato, peeled and cubed
1 package mushrooms, diced
1 can kidney beans, drained and rinsed
1 can diced tomatoes
~2 cups water (more or less depending on your desired liquidity)
1 heaping tbsp paprika
4 heaping tbsp chilli powder
Sprinkle (or more) cayenne
Salt to taste
1/2 tsp oregano
1/2 tsp ground thyme (or flakes if you have it)
1/2 tsp cumin
~1tsp ground cinnamon
Optional: fresh cilantro, sour cream, shredded cheese.
Instructions
1. Cut, peel, and prepare ingredients.
2. Add ground beef to bottom of slow cooker. Layer carrots, sweet potatoes, mushroom and kidney beans, in order. Pour diced tomatoes over top.
3. Add spices, then pour water overtop and gently stir, making sure carrots and sweet potatoes stay under the liquid.
4. Either refrigerate for tomorrow morning or start on low and cook for at least 8 hours.
5. Give it a stir and serve. Top with optional ingredients if you desire.
