The Best Sweet Potatoes!

This is by far my favourite recipe I’ve made. I love the combination of spicy cayenne with coconut. Not to mention, the health benefits from the sweet potato to sweeten the deal! You can make this on the stovetop or in the oven – I’ll provide instructions for both ways!

Ingredients

1-2 large sweet potatoes
~1 tbsp coconut oil
~1/2 tsp or less cayenne
Salt to taste

Instructions

1. Slice sweet potatoes thinly. You can choose whether or not to leave the skin on.

2. Heat coconut oil in either a large pan if doing on the stovetop, or in a rimmed baking sheet in the oven (375 degrees), until melted. Add sweet potatoes and toss to fully coat with oil. Depending on the amount of sweet potato you have, you may need to use more oil. Sprinkle with lightly cayenne then a bit of salt.

3. If cooking on the stovetop, cover pan with a lid, flipping potatoes every few minutes or so until softened and browned. If cooking in the oven, bake for 10 minutes, flip and bake for another 10 minutes or so, until browned and softened.

Serve with eggs for breakfast or with your choice of protein and vegetables for dinner.
