Bison Mushroom Burgers

These were a great hit during my cooking demos at Agribition! I am so pleased to have partnered with the Canadian Bison Association to work on this recipe. Ingredients

2 pounds ground bison

About 1 cup (or more if you prefer) mushrooms, rinsed and cleaned

1 small onion

3 cloves fresh garlic, peeled

About 1/4 cup breadcrumbs

2-3 tablespoons fresh parsley, finely chopped

1-2 tablespoons fresh basil

1/2 tsp salt, plus extra later on

Freshly ground black pepper

Instructions

1. Add mushrooms to food processor (I have a mini one that works great for this). If you don’t have a food processor, use a blender or mini blender, pulsing to chop everything. Be careful in a blender to not purée everything. You want it to be chopped not blended. If you want, add the fresh parsley and basil here to also finely chop rather than doing it yourself. If using a food processor, set to chop and pulse to chop fine. Mushrooms are quite soft and won’t take much effort to finely chop. Once done, transfer to a medium bowl.

2. Add onion and garlic to food processor and repeat as above, except you want to stop and stir every so often because onions are quite wet and will stick together rather than chopping. Stop and stir every few pulses and continue until very finely chopped like the mushrooms. Leave in your food processor for now.

3. In a large bowl, add in the ground bison meat, then top with the mushrooms and onions blends and breadcrumbs. Add salt and pepper. Once everything is added, using your hands or a spatula, mix all ingredients until well blended. Check your consistency – you may want to add more meat to even out the mushroom/onion to meat ratio or add more breadcrumbs to hold it together better. Really make this your own!

4. Once your meat mixture is consistent throughout, it’s time to form your patties. Heat a large pan over medium-high heat OR preheat your BBQ. Have a plate ready beside your bowl for your patties. Form patties as big as you want. They won’t really shrink that much. Make sure you form them a nice round shape and are packed well so that they stay together. Form all of your patties and soak your bowl in hot water.

5. Add patties to pan or BBQ and cook for a few minutes on each side then flip. Continue this until they are fully cooked with no pink on the inside. You do not want any pink in your burger!! Please practice safe food handling practices and fully cook your bison meat.
