Tortellini Pizza

Looking for a new spin on a casserole, yet sneak in some vegetables? Here is a fun twist on pizza and using tortellini! This is a quick and delicious recipe. Feel free to change up the “pizza” ingredients to suit your family’s tastes.

Ingredients

1 package cheese tortellini, uncooked (I use one of the packages from Costco – but only one of the three packages it comes in!)

3/4-1 whole pepperoni sleeve (depending on how much protein you want)

3 cups (or more) fresh spinach

1 package mushrooms, sliced

1 green bell pepper, julienned

1 jar marinara sauce

Fresh basil and parsley (about 1 heaping tablespoon)

1/2 tsp dried oregano

1/2 tsp chilli flakes

~2 cups mozzarella cheese, shredded

Instructions

1. Bring a large pot of water to a boil. Add in the tortellini and stir occasionally. Cook for six minutes.

2. Preheat the oven to 400 degrees. Spray a 9″ x 13″ glass bake pan with cooking spray and set aside.

3. While the water is boiling and the tortellini cooks, heat a medium-sized frying pan over medium heat with a dollop of canola oil. Sauté the spinach, stirring until starting to shrivel.

4. When the tortellini is cooked, drain and rinse with water to remove excess starch. Add to the glass baking pan, then add in the spinach when done sautéing and stir to combine with tortellini into an even layer.

5. Place pan back on heat and sauté the mushrooms and peppers.

6. Pour jar of marinara sauce over tortellini and spinach, then sprinkle with oregano, chilli flakes, parsley and basil. Add light layer of pepperoni, then sprinkle cheese. Top with mushrooms and a final layer of remaining pepperoni.

7. Bake for 20-25 minutes, until casserole is browning.
