Quick and Easy Italian Wedding Soup

I whipped up a batch of this soup right after work yesterday for Grandpa Fraser before Joc took him to the Brier. They didn’t have much time so this is a quick recipe you can use with your busy family!

Ingredients

1 package frozen spinach

3 beef bouillon cubes or cups

About 10 cups of water (base it on how much broth you want and add more as needed)

Half a box of your favourite mini noodles

Half box of frozen meatballs (I used beef meatballs)

1 tsp oregano

1tsp basil

1/2 tsp thyme leaves

1/2 tsp parsley

Salt and freshly ground pepper

Instructions

1. Preheat oven to cook meatballs as direction on the box.

2. In a large pot, bring water, spices, salt, pepper and bouillon to a boil.

3. While the water heats, in a small pot add half a cup of water (or less) and spinach to thaw.

4. Once water boils, add noodles to cook. When the spinach is ready, add it too. By this point your meatballs should be almost done. When they are, add to Soup.

5. Stir occasionally until noodles are tender.
