Lentil Soup Spiced with Turmeric and Ginger

Ingredients

1 tbsp canola oil

1 medium onion, finely chopped

1 cup lentils

4 cups or more water

2-3 cloves garlic (I like to add more)

1.5 heaping teaspoons tumeric

1.5 heaping teaspoons ground ginger

1 tsp paprika

Salt and pepper to taste

Cilantro to garnish

Instructions

1. Heat oil in large pot. Add onions and sauté until translucent. Add remaining ingredients and stir gently.

2. Bring to a boil and simmer over low heat for 30-45 minutes, until lentils are tender. Add more water as desired for broth.

3. Spoon into bowls and garnish with roughly chopped fresh cilantro and sprinkle of paprika.
