Made with Saskatchewan oats, honey and flax, these are a great snack to keep you satiated as they are packed with omega fatty acids, fibre and protein!
Play around with the optional ingredients to make your own favourite energy bites!
Ingredients
1 cup oats (any kind you prefer)
1/4-1/2 cup milled golden roasted flax (I like to use Fee Fi Fo Flax)
1 package vanilla Shakeology (for more information, contact me!)
~1/3 cup honey, or more as needed
Optional ingredients: (use two)
1/2 cup dried cranberries
2/3 cup unsweetened coconut, desiccated
1/4 cup almonds, unsalted, chopped or slivered
1/3 cup shaved dark chocolate (or more)
1/2 cup apple (variety of your choice), finely chopped
1tsp or more cinnamon and nutmeg
1/2 cup dried Saskatoon berries
1/2 cup unsweetened coconut, desiccated
1/4 cup or more peanut butter or powder peanut butter
1/3 cup banana chips (or more)
Instructions
1. In a medium bowl, combine oats, flax and Shakeology. Use a fork or whisk to combine.
2. Add the two optional ingredients of your choice.
3. Add honey and stir until fully combined and everything is coated. I suggest adding in honey a little at a time so you can stir it easier and make sure it isn’t in one clump.
4. Refrigerate in sealed container for at least half an hour.
5. Roll out mixture into 1″ or 2″ balls and place in a container. You can layer the bites as long as you out wax paper in between layers.
5. Keep bites refrigerated for up to one week.
