My version of a family favourite! This recipe is packed full of vegetables along with extra lean ground turkey for a healthier alternative to the typical ground beef.
Ingredients
1 onion, diced
1 tbsp oil (I typically use olive or canola)
2-3 cloves of garlic
4 celery stalks, chopped
6 carrots, peeled and sliced
1/2 tsp basil
1 tsp oregano
1 tsp parsley
Pinch of cayenne
Salt and pepper to taste
1 cup corn kernels
1 cup green beans (frozen)
1 can diced tomatoes
6-8 cups chicken broth
1 lb extra lean ground turkey
Steps
- In a large pot saute onion in oil over medium heat until starting to tenderize, add garlic and saute for 2 minutes. Add in carrots and celery and saute for 5-10 minutes, stirring frequently. Add more oil as needed to ensure vegetables do not burn.
- While the vegetables are tenderizing, brown the ground turkey in a separate pan.
- Add diced tomatoes, chicken broth and herbs to the pot with the vegetables. Increase heat to high and bring soup to a boil. Once boiling, add frozen vegetables and corn to soup, reduce heat and simmer for 30 minutes, or until vegetables are soft.
- Add turkey to soup and cook for 5 minutes longer.
- Serve with whole wheat bread or buns.
