Being a proud prairie girl working in agriculture, I love to use locally grown grains. My favourite grain is barley. This is Jayson’s favourite recipe. I make it at least once a month!
Ingredients
1 cup barley
2 cups chicken broth
1.5 tbsp canola oil, divided
1 lb mild Italian sausage
1 red bell pepper, chopped
1 cup mushrooms, chopped
1/4 cup fresh basil, finely chopped
Salt and pepper to taste
Steps
- Cook barley in chicken broth according to type of barley you have (there is quick cooking, pearl and pot barley out there).
- While your barley is cooking, take sausage out of casing and into a large skillet pan with 1 tbsp olive oil over medium heat until cooked.
- Add the remaining olive oil and the mushrooms and red pepper. Reduce to medium-low heat. Cook for about 5 minutes, until vegetables are tender. Add in barley and fresh basil. Cook for another 2-3 minutes.
