Barley Sausage Skillet

Being a proud prairie girl working in agriculture, I love to use locally grown grains. My favourite grain is barley. This is Jayson’s favourite recipe. I make it at least once a month!

Ingredients

1 cup barley
2 cups chicken broth
1.5 tbsp canola oil, divided
1 lb mild Italian sausage
1 red bell pepper, chopped
1 cup mushrooms, chopped
1/4 cup fresh basil, finely chopped
Salt and pepper to taste

Steps

  1. Cook barley in chicken broth according to type of barley you have (there is quick cooking, pearl and pot barley out there).
  2. While your barley is cooking, take sausage out of casing and into a large skillet pan with 1 tbsp olive oil over medium heat until cooked.
  3. Add the remaining olive oil and the mushrooms and red pepper. Reduce to medium-low heat. Cook for about 5 minutes, until vegetables are tender. Add in barley and fresh basil. Cook for another 2-3 minutes.
  4. Enjoy!
